This super simple way to cook prawns is one of my favorites. They can be served as a hot appetizer along with crusty bread to dip up the sauce or tossed with spaghetti or linguine for an entrée.
You will need:
- 1 lb good quality prawns, peeled and deveined
- 1/4 cup neutral tasting oil, like canola, peanut or grape seed
- 1 Tbsp olive oil
- 2 large garlic cloves, peeled and minced
- zest and juice of a small lemon
- About 2 tablespoons of finely chopped parsley
- About 1 teaspoon of sweet Hungarian/Spanish paprika
- A generous pinch of salt
- A pinch or two of red hot chili pepper flakes (optional)
Heat all the oil in a wide pan. When it's hot, add garlic and give a quick stir. Immediately add the prawns and give a good stir.
Cook the prawns, stirring them often, about a minute and add the rest of the ingredients. Cook for another minute or so and remove from the heat.
If serving with pasta, add hot freshly cooked spaghetti or linguine right into the pan and toss to combine with the prawns and the sauce.
