To continue on nectarines and blueberries, here’s the simplest recipe you can cook with them and it makes an awesome topping for ice creams, semifreddo or yogurt parfait. I myself can eat them plain, especially when they are still slightly warm. So make sure to cook plenty - I guarantee you will find yourself sneaking them in your mouth right from the baking dish again and again, so delish they are!
It takes only 10 minutes to cook them, so I usually put them in the oven by the end of dinner. If you serve it in courses, put the fruits in the oven when you serve entrees.
You will need:
- 2 medium nectarines (I prefer yellow)
- A handful of blueberries
- A pinch or two of sugar (depending on the sweetness of the fruits)
Preheat the oven to 425F. If using convection mode, preheat to 410F.
Cut nectarines into bite size pieces and arrange in one layer in a baking dish. Sprinkle with sugar. Place in the oven and bake for about 5 minutes. Remove from the oven and scatter blueberries on top. Put back in the oven and cook for another 5 minutes.
Remove from the oven and let cool slightly before serving. Enjoy!
